Lemons were first known to be a product of Pakistan and India before quickly spreading around the world as ancient Egyptians and Romans, among others, praised their great qualities. Today, California and Arizona produce upwards of 95% of the US crop of lemons. Lisbon (the most commonly grown) and Eureka are the two main varieties of lemons with a third, the Meyer, believed to be a cross with an orange or mandarin. Bright yellow with a bold tart and tangy flavor, the lemon is a widely versatile and healthy addition to any kitchen and diet. Besides the more commonly known uses for this zesty fruit, lemons can help reduce sodium and fat intake by using them as a substitute for salt and butter. A bowl of fresh lemons can also add color and fragrance to a room for days.
