Cucumbers are one of the most widely cultivated vegetables in the world. Although they come in a variety of sizes and colors, the most common are a torpedo-shaped with a dark green skin and a whitish edible pulp containing seeds. Originally grown in India and a favorite food of the Pharaohs, cucumbers are in the same botanical family as melons (watermelon and cantaloupe) and squashes (summer squash, zucchini and pumpkin). They are packed with health benefits and most known for their rich source of antioxidants and a wide range of vitamins. Sliced cucumbers are most refreshing eaten raw with the skin on unless it is very tough. They can also be steamed, boiled, baked, stir-fried or microwaved and served as a vegetable, in soup or stuffed.
