The Russet (meaning rough) potato was given its name as a result of its rough textured skin. Sometimes referred to as Idaho potatoes, the Russet is a highly versatile, starchy potato and the most widely used for baking and frying. Their firm, ruddy-colored skin and low-sugar, snowy white flesh make them the perfect choice for baked potatoes, mashed potatoes, and the standard for French fries. Besides starchy carbohydrates, Russet potatoes have virtually no fat and are a good source of vitamin C, potassium, fiber and niacin (vitamin B3).
