There are many varieties of summer squash, which refers to their shorter storage life compared to their winter squash cousins. Sutherland offers both Yellow summer squash, also commonly known as Straightneck squash, and Zucchini or Courgette. A good Yellow squash will be small and firm with mildly sweet, tender flesh. Its skin can be left on the fruit for many types of recipes and is often used interchangeably with Zucchini. Although available year round in some regions, Yellow squash is at its peak from early to late summer.
Zucchini, on the other hand, can grow much larger than its Yellow squash counterpart, and can easily reach three feet in length, but is generally harvested at half that size. It is commonly dark or light green, although there are some varieties that are deep yellow or orange. In a culinary context, Zucchini is treated as a vegetable, but botanically, it a fruit. Like all squash, Zucchini has its ancestry in the Americas. However, the varieties of squash typically called Zucchini were developed in Italy many generations after their introduction from the Americas.
